Our aim is to supply to our guests the best local and regional foods available focusing on simple flavours, quality product and consistency using correct techniques.

The Cardrona Merino is well received by our guests, we use their lamb both for our a la carte guests and inbound tour guests as this is a good example to showcase a unique local flavour.

My background as a chef has taken me around New Zealand working in hotels, five star golf resort and restaurants. What inspires me most is good produce, cooked correctly and simply so you can taste its natural flavour. I believe in only serving products that have a natural marriage in which they complement each other."
