A classic cut made famous in the south by Botswana Butchery. The carvery includes the front shank but has the shoulder blade removed for clean carving. Already rolled and tied the cut is very easy to prepare and should always be slow cooked to allow the texture and flavour to merge. Once cooked the Cardrona Carvery is a visual centerpiece for any table.

To complete the order you need to select at least 8 kg of single cuts. This can be any mixture of, Cardrona Carvery Shoulder, Flat Bone Shoulder and Tunnel Boned Leg. When going over 10 kg the cuts will be delivered in a 20 kg box.
