This is a very flavoursome cut and although many people do not cook the shoulder it is one of our favourites as with Logan Brown who often has a standard order for this cut. The shoulder opens up relatively flat out of the pack and is either cooked medium rare on the barbeque or slow roasted at a low temperature for 3 ½ hours. I am always aiming to have a string texture coupled with moisture when I plate this dish.

To complete the order you need to select at least 8 kg of single cuts. This can be any mixture of, Cardrona Carvery Shoulder, Flat Bone Shoulder and Tunnel Boned Leg. When going over 10 kg the cuts will be delivered in a 20 kg box.
